This recipe is invented by my house mate Amiirah who is leaving Perth for good today 😦 All of us are going to miss her so much! I wish her all the best with her future job opportunities and everything else as well!
Now this is Amii’s specialty dish.. and it’s awesome.. If it wasn’t I wouldn’t be blogging about it!!
She made this for us once and we were swooning away as the taste of the preserved olives with the rice was just delightful! This is the picture of it below! You gotsa try it! She gave me the recipe and I was able to emulate it as there are very few ingredients involved because most of the flavor comes from the preserved olives!
That’s the jar of preserved olives she uses.. It is not whole but is actually more like a paste and boy do they taste good!
2 cups cooked rice
500g stir-fried chicken breast pieces diced (You could marinate it first with your choice of seasoning)
1 Tbsp oil
1 onion, sliced
2 cloves of garlic, chopped
1 Tbsp garlic-ginger paste
1/2 Jar of preserved olives (I found it in Mustafa Centre in Singapore; in Perth you should be able to get it at any Asian grocery stores)
2 carrots sliced up
1 Tbsp sweet soy sauce
Salt to taste
That’s all I had to put! The carrots added a lovely crunch to the otherwise flavoursome dish!
All you have to do is fry the onions and garlic then the ginger garlic paste and then go on to add the carrots.. You then add in rice and preserved olives and mix em up real good. Once that’s done you add the pre-cooked chicken, sweet soy sauce and salt to taste! Done!
